Chicken, Rocket & Spinach Salad with Yogurt Dressing

I've not really had rocket before I moved to Perth. And when I tried it, I became an instant fan of its sharp unique taste. Here's a salad I whip up quite frequently.
This is a good recipe of 'high vibration' foods. The theory of food vibrations is not radical, it is supportive of the concept that the fresher, less processed the food item, the healthier it is for you. This salad ingredients of fresh rocket, spinach & coriander is accompanied with free range chicken(higher measures of vibrations), organic yogurt, a lemon picked from my neighbour's garden and the healing spice, cumin. You can use the leftover yogurt dressing to eat with any salad or over a lamb kebab. Its also compliments grilled white fish, or some plain potato chips/Carrot sticks.

Serves 2

Salad Ingredients:
2 Free range chicken breasts
Bunch of Baby spinach
Handful of Rocket leaves
About 3 Tbsp Chopped fresh Coriander
Salt & pepper
1 Tsp olive oil for frying

Dressing Ingredients:
2 Tbsp Plain Yogurt
Pinch of ground cumin or cumin seeds
1 Tsp Good quality Olive oil
1/2 Lemon
1-2 Tsp Water
Pinch of salt

1. Season your chicken breasts with salt and pepper. Heat oil in a pan and fry the chicken breast till brown on each side. About 5-8 mins depending on the thickness of the breast.
2. Open up a bottle of bubbly, bring out the crackers and camembert cheese. Snack and sip while frying chicken breasts. (Optional :D )
3. In a clean, dry container place 2-3 Tbsp of yogurt then grate a little of the lemon rind into it. After grating squeeze the lemon juice in, about 1 tbsp is sufficient. Add the cumin, Salt, Olive oil and water. Give it a good stir. Consistency should be runny but still cover the spoon.
4. Arrange the salad ingredients on plates. Chicken breasts should be done by now, slice and place on top of salad leaves. Drizzle the yogurt dressing and eat slowly.
