Vegie Fritatta

So I came home today and was so buggered, but I can't just deny my apron duties. I needed to make dinner fast and healthy enough. I made this in 1 hour 15 mins flat. I hate how some recipes say 30 mins, but I end up toiling for 1.5 hours and most of it was the preparation time. Here is my version which includes preparations in between cooking. I learnt that you should prepare as you go along to save time. A good way to structure your cooking time is read the recipes before hand and to look at what ingredients go into the pot first, what ingredients take the longest to cook. Microwaves help to half the time. Its not quite the best option for cooking, a little cheating helps when you just cannot be bothered.

Ingredients

2 garlic cloves
5 eggs
1/4 of a pumpkin
1 zucchini
100g of feta cheese (optional, other other hard cheeses)
Cheddar cheese ( I had an inch left so used that up)
1 inch of butter (I used up what I had left)
Tools: heavy based pan (oven prrof). Grill (If you don't have one just use the pan cover)

1. Peel potatoes and slice them up thinly. Nuke this with a little bit of water in the microwave for 4-5 mins. In this 5 mins, bash up a garlic to loosen the skin and mince them. Put it in a heavy based pan with butter over medium heat. Let that fry gently and start cutting the pumpkin.

2. Potatoes should ding by now. Chuck them into the pan as the garlic should be brown now. Fry potatoes and put pumpkin in microwave with a cup of water, zap it for 5 mins. Start slicing zucchini, thinly so it cooks quickly. Pumpkin should ding by now.(Don't forget to stir potatoes now and then). Put pumpkin into the pan stir around, if its not cooked through, put the lid of the pan on to cook. Throw in the zucchini.

3. In the meantime chop up the feta cheese, and grate the cheddar cheese. Feta cheese goes into the mixture, Cheddar goes on top later on.

4. Check if all vegetables are cooked through. Dot the feta cheese into the vegie mix. Stir through a bit. Now break the eggs into a bowl and whisk it up. Pour eggs into pan. Cover with the lid for about 5 mins on low heat. Then throw the cheddar cheese on top and put under a high grill. If you don't have a grill, just place the cover back on. grilling just browns the cheese
6. Serve with salad, or bread. I served toasted bread with some spicy capsicum dip we had in the fridge.
